Sierra ceviche is an easy and quick dish to prepare and very comfortable to carry in any container, so that is why I recommend it for a Sunday at the beach with friends or family, although it is delicious to eat at home too

6 portions
  • 1 kilo sawfish, ground, they can sell it that way or ask them to grind it
  • 1/4 teaspoons ground oregano
  • 15 lemons
  • 2 serrano peppers, finite chopped
  • 1 red onion, medium, finely chopped
  • 1 cucumber, peeled and diced in small cubes
  • 1 tomtato, finely chopped
  • 15 branches fresh coriander, washed and chopped finely
  • salt, and pepper to taste

In a good-sized bowl, put the ground saw and season with enough salt and pepper. Add the juice of the lemons and oregano and stir well.
Marinate the fish for 10 or 15 minutes so it is well seasoned. When the fish is already well seasoned (it becomes whiter) you can either strain to remove the excess of lemon, or if you like a ceviche juice can leave the juice. The fish already has all the flavor of lemon, salt and oregano penetrated, so it is a matter of taste and preference if left with lemon or sneaks.
Add the chili, the purple onion, the cucumber, the tomato and the cilantro and mix everything very well.
It can be accompanied with toast spread with mayonnaise, with tortilla chips or as mentioned in the introduction with the "hard" of large pork rinds sold in the sweetshops. Delicious accompanied with bottle sauce.

It can be accompanied with tostaditas or chicharrón de harina or "hard" as we call them in Sinaloa. Ready! Bon Appetite!

It is best to consume the ceviche in its entirety once prepared, otherwise, the lemon becomes rancid and can give a bad taste to all the ceviche and it is no longer recommended to consume it. Also once the fish has been tanned, its shelf life is reduced.

Es opcional Pablo, puede ir rallada como sugiere Cecilia o como se ve en la imagen. Además de esta manera puedes tener una receta más económica pues requerirás de menos pescado. Saludos!
