Cod Croquettes with Potato

Ingredients

8 portions
  • 1 kilo Langa® Crumbled cod
  • enough Water
  • 4 potatoes
  • 1 cup Parmesan, grated
  • 1 tablespoon chives, finely chopped
  • 1 tablespoon parsley, finely chopped
  • 4 tablespoons jalapeno pepper, red toreados, pickled and finely chopped
  • 1 egg
  • 3 tablespoons ground bread
  • to taste salt
  • to taste black pepper
  • to taste dressing, thousand islands, to accompany
  • enough parsley, to decorate

Preparation

Soak the crumbled Langa® cod in a pot with cold water, let stand 2 to 3 days, until it is desalted. Change the water every 12 hours. Rinse and drain.
Cook the potatoes with peel and water, add salt and cook for 30 minutes, or, until they are soft. Let cool and remove the peel.
With the help of a crusher, crush the potatoes, add parmesan, chives, parsley, jalapeño pepper, egg, ground bread, desalted cod, season if necessary.
With the help of your hands, form croquettes, go through flour, egg and breadcrumbs.
In a skillet over medium heat, heat the oil and fry the croquettes for 5 minutes, or until they are lightly browned. Place on absorbent paper to remove excess grease.
Garnish with parsley and accompany a thousand islands with dressing.

TIPS

It is important to cook the potatoes in the shell, so that they do not absorb too much water when crushing them. You can add cornstarch if the consistency of the croquettes is very soft.
