For this Christmas's leftovers, we recommend you cook this Cod Cake, a rich recipe so you will not have to buy cod since you will use the leftovers from the previous day. Ingredients

6 portions
  • 4 liters Water
  • 1 kilo cod, salted, drained and crumbled, without spines or skin
  • 1 kilo tomtato, roasted
  • 1/4 cups olive oil
  • 4 cloves garlic
  • 1/2 white onions, finely chopped
  • 1/4 cups green olive, whole
  • 1/3 cups capers
  • 6 güero ppeppers, in vinegar
  • 1/4 cups parsley, finely chopped
  • 1/4 cups almond, whole, without the peel and toasted
  • 2 cups cambray potato, cut into quarters and cooked
  • 6 Mexican french bread rolls, Cut in half
  • enough mayonnaise, To accompany
  • enough güero pepper, To accompany

Preparation

Heat a pot with the water and cook the cod around 20 minutes.
Blend the roasted tomatoes, with a little water to form a puree, strain and reserve.
Heat a deep frying pan over medium heat with the olive oil, sauté the garlic, onion, add the tomato that you previously liquefied and cook a few minutes.
Add the olives, the capers, the chilies, the parsley, the crumbled cod and cook for about 15 minutes over low heat. Add the almonds and potatoes, rectify seasoning, and reserve.
Heat a comal over medium heat, spread the mayonnaise bread roll, fill with the cod and brown the roll until crispy. Serve with chiles.

PRESENTATION

Serve the sandwich accompanied by güeros chiles.

TIPS

Dip the fish in water at least 1 to 2 days before. Change the water several times a day, so that the salt concentration decreases. This dish is ideal for the Christmas Eve leftovers.
