These tacos are typical of the state of the state of Sinaloa, they were created in a restaurant to please the taste of the current governor, hence the name. The main ingredients of the governor tacos are shrimp, poblano pepper and cheese. You will love them!

Ingredients

4 portions
  • enough vegetal oil
  • 1 onion, medium, 200 g
  • 1 clove garlic, finely chopped
  • 1 1/2 cups poblano pepper, in slits
  • 1 branch celery, finely chopped
  • 3 cups shrimp, peeled, clean and deveined (1/2 kilo)
  • to taste salt
  • to taste black pepper
  • 10 corn tortillas
  • 2 cups manchego cheese, grated
  • to taste green sauce, To accompany
  • to taste lemon

Preparation

Heat a frying pan over medium heat, pour a little oil and sauté the onion, garlic and celery for 3 minutes; Add the poblano pepper slices and cook for 5 more minutes.
Add the shrimp and season with salt and pepper; cook 5 minutes until shrimp change color. Remove from heat.
Heat the tortillas in a frying pan or griddle over low heat, add the cheese and melt for 2 minutes. Add the shrimp dressing, close the tacos and remove from the heat.
Serve the warm tacos with sauce of your choice.

PRESENTATION

They are accompanied with lemons and the sauce of your preference.

TIPS

Shrimp must be very fresh, this will make a big difference in taste.
