The fish a la Livornese is a recipe for white fish in a tomato sauce, olives and basil.

Ingredients

4 portions
  • 4 golden fish, (oriental, sierra, etc)
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 2 tomatoes, peeled and cut into cubes
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/4 cups basil
  • 1/4 cups kalamata olive
  • 4 tablespoons capers

Preparation

In a large skillet, heat the oil over medium heat. Add the garlic and cook for 30 seconds.
Add the tomatoes, and the salt and pepper and with a wooden spoon crush the tomatoes while they cook until they start to boil.
Reduce heat to low and cook for 10 minutes.
Put the fish fillets in the tomato sauce, cover and cook for 10 minutes.
With a spatula, transfer the fish to a hot dish.
Add the basil, olives and capers to the tomato and mix well.
Pour the sauce over the fish and serve.

PRESENTATION

Garnish with fresh basil leaves.

Rico En general me gusto, hice dos variaciones, la prepare con Black Bass, y le agregue limón a la salsa. Lástima que no se puedan subir fotos, pero yo le tome foto a mi platillo.
