Preparation
In a large skillet, heat the oil over medium heat. Add the garlic and cook for 30 seconds.
Add the tomatoes, and the salt and pepper and with a wooden spoon crush the tomatoes while they cook until they start to boil.
Reduce heat to low and cook for 10 minutes.
Put the fish fillets in the tomato sauce, cover and cook for 10 minutes.
With a spatula, transfer the fish to a hot dish.
Add the basil, olives and capers to the tomato and mix well.
Pour the sauce over the fish and serve.
