Fish in Adobo Sauce

In Mexico many varieties of fmarinated fish in adobo are served, mainly prepared with chile ancho or morita pepper, some cloves of garlic, onion, oregano, a touch of cumin and a hint of vinegar. This fish in adobo sauce dish is going to be the sensation, in addition it is very easy to prepare.

Ingredients

4 portions
  • 2 tablespoons olive oil, for the marinade
  • 3 cloves garlic, for the marinade
  • 1/2 white onions, for the marinade
  • 6 ancho chili peppers, clean and seedless, for the marinade
  • 5 morita chili peppers, for the marinade
  • 2 guajillo chilies, for the marinade
  • 1 tomtato, in rooms, for the marinade
  • 1 teaspoon oregano, for the marinade
  • 1 teaspoon allspices, for the marinade
  • 1 teaspoon cumin, for the marinade
  • 1/8 cups orange juice, for the marinade
  • 1/8 cups vinegar, of pineapple, for the marinade
  • 1 pinch salt, for the marinade
  • 4 Fish fillets, (red snapper, sea bass or bass) 250 grams approximately per piece
  • 1 cup red onion, filleted
  • 1 orange, cut in half moons
  • 1 cup fresh coriander
  • to taste lemon

Preparation

For the marinade, heat a pan over medium heat with the olive oil, cook the garlic, onion, chilies, tomato, oregano, pepper and cumin for 10 minutes. Place the ingredients in the blender and blend for 3 minutes with the orange juice and pineapple vinegar, season lightly with salt and reserve.
In an oven proof dish marinate the fish with the adobo for 1 hour.
Heat a grill or skillet over high heat and cook the fish for 10 to 15 minutes depending on the thickness. Remove from the pan and serve with orange, purple onion, fresh cilantro accompany with lime and vegetables or rice. Enjoy

PRESENTATION

Serve with purple onion, orange and cilantro. Also with a salad of fresh lettuce and tomato.

TIPS

Season the fish with salt and pepper and rub it with olive oil, heat your pan well so that it doesn't stick when cooked.
