Fish Tacos with Pineapple Shepherd

Cravings for the pastor? Prepare this different option with fish with its delicious marinade of chili peppers and accompanied by a salsita of chile de árbol, it will take away more than the craving. They are accompanied with pineapple, onion, cilantro and lemon. Delicious!

Ingredients

6 servings
  • 2 pieces of guajillo chili pepper
  • 1/4 of piece of onion
  • 1/2 Cup of orange juice
  • 1/4 of stick of achiote
  • 1 clove of garlic
  • 1 teaspoonful of cumin
  • 1 teaspoonful of oregano
  • 1 teaspoonful of Salt
  • 6 pieces of fish fillet cut into strips
  • 10 pieces of Chile de árbol pepper
  • 2 pieces of guajillo chili pepper
  • 2 cloves of garlic
  • 2 pieces of tomato
  • enough of Water
  • 2 spoonfuls of oil
  • 12 pieces of Corn tortillas blue
  • 4 slices of pineapple
  • to taste of onion
  • to taste of coriander
  • to taste of green lemon

    Preparation

    For the marinade, liquefy the guajillo chili, the onion, the orange juice, the annatto, garlic, cumin, oregano and salt.
    Pour the previous preparation into the fish and marina for 30 min.
    For the sauce, fry the chiles de árbol, guajillo chili, garlic and tomatoes in a pan. Blend with a little water if necessary. Reservation.
    On a skillet over medium heat place oil and cook the fish for 5 minutes or until well cooked.
    In a comal heat the tortillas and serve the fish, accompany with roasted pineapple, onion, cilantro, salsita and a little lemon.

    PRESENTATION

    Serve on blue corn tortillas and serve with pineapple, cilantro and lemon.

    TIPS

    You can substitute orange juice for white vinegar.
