Preparation
For the marinade, liquefy the guajillo chili, the onion, the orange juice, the annatto, garlic, cumin, oregano and salt.
Pour the previous preparation into the fish and marina for 30 min.
For the sauce, fry the chiles de árbol, guajillo chili, garlic and tomatoes in a pan. Blend with a little water if necessary. Reservation.
On a skillet over medium heat place oil and cook the fish for 5 minutes or until well cooked.
In a comal heat the tortillas and serve the fish, accompany with roasted pineapple, onion, cilantro, salsita and a little lemon.
