Heat a pan over medium heat with the olive oil, cook the garlic, onion and tomato, until you get a thick sauce.
Add the capers, the olives and cook 3 more minutes to incorporate the flavors. Add the parsley, green peppers, bay leaf and cook for 5 more minutes.
Add the fish to the sauce, cover it with the same, sprinkle oregano to taste and cover so that it cooks well.
Serve and enjoy.
