Fish to the Veracruzana with Chiles Güeros

Veracruz-style fish is a typical dish that fuses the flavors of Mexican cuisine with Spanish cuisine, this delicious dish is made with tomatoes, olives, capers and güeros chiles. Accompanied with a little white rice, it will be ideal to prepare it on any occasion and be spectacular.

Ingredients

4 portions
  • 1/4 cups olive oil
  • 4 cloves garlic, finely chopped
  • 1 white onion, filleted
  • 4 tomatoes, poached and finely chopped
  • 1/4 cups capers
  • 1/2 cups green olive, cut into slices
  • 1/2 cups parsley, finely chopped
  • 1 cup güero pepper, with a little bit of brine
  • 2 leaves bay (laurel)
  • 4 Fish fillets
  • 1 pinch oregano
  • 1 pinch salt

Preparation

Heat a pan over medium heat with the olive oil, cook the garlic, onion and tomato, until you get a thick sauce.
Add the capers, the olives and cook 3 more minutes to incorporate the flavors. Add the parsley, green peppers, bay leaf and cook for 5 more minutes.
Add the fish to the sauce, cover it with the same, sprinkle oregano to taste and cover so that it cooks well.
Serve and enjoy.

PRESENTATION

Garnish the fish with the salsa güeros chiles and olives. Accompany with a little white rice.

TIPS

With this preparation you can fill some güeros chiles, the fish that is commonly used is the snook.
