Rectangles of aluminum foil are cut out where the fish will be wrapped and spread with butter for a better flavor.
Place the fish, a few slices of onion, tomato, the sprig of epazote and a chili in rajas (without seeds).
Sprinkle 1/2 teaspoon of chicken broth and 1 tablespoon of olive oil.
They are wrapped and can be cooked in two ways: In a comal over medium heat on one side for 15 minutes or until the bottom part browned and the other in the oven at 280ºC for 15 minutes.
