Ingredients

4 servings
  • 1/4 of Cup of Extra Virgin Olive Oil Carbonell®
  • 1 piece of White onion filleted
  • 4 cloves of garlic filleted
  • 6 pieces of tomato poached
  • 1/2 Cup of tomato puree
  • 1/4 of Cup of Carbonell® capers
  • 1/2 Cup of Carbonell® pitted olives slices
  • 4 cups of güero pepper pickles
  • 2 leaves of laurel
  • 1 tablespoon of oregano dry
  • 2 spoonfuls of parsley finely chopped
  • enough of Salt
  • enough of black pepper
  • enough of banana leaf
  • 4 pieces of red snapper filet 150 gc / u
  • enough of parsley

    Preparation

    For the sauce, in a pan over medium heat heat the extra virgin olive oil Carbonell® and cook the onion until it is transparent. Add the garlic and brown lightly, add the tomato, the tomato puree and cook 3 minutes.
    Add the capers and the pitted Carbonell® olives, the güeros chiles, the laurel, the oregano, the parsley and cook for 5 minutes. Season with salt and pepper, remove and cool.
    In a comal, roast the plantain leaves to soften.
    Season the red snapper fillets with salt and pepper, place them on the banana leaves and cover with the sauce you prepared. Close and cook in a pot with grid and boiling water until the fish is cooked.
    Serve the wallpaper, decorate with fresh parsley and serve with white rice.

    PRESENTATION

    Serve the wallpaper fish accompanied by white rice.

    TIPS

    "Soasar" the banana leaves will make them flexible and that you can handle them better. Remember that the opaque part is the one that must have the contact with the food.
