Ingredients

6 portions
  • 1 kilo fish, catfish
  • 2 bananas, medium
  • 2 cloves garlic
  • fresh coriander, chopped
  • cumin, to taste
  • salt, and pepper to taste
  • 1 onion, and pepper to taste
  • 2 tomatoes, little
  • 1/2 liters whole milk
  • 2 tablespoons oil
  • 1/4 kilos cassava

Preparation

In a pot with a little oil, make a sautéed chopped onion and the crushed garlic.
Blend the tomatoes and the sauce with a portion of water.
Add the washed catfish head and seasonings. Remove the foam from the surface, cook for 30 minutes.
Pass the broth through a fine strainer to another pot and add the previously peeled and chopped yucca and banana. When the yucca and plantain are soft, add the sliced fish and cook over low heat for 20 minutes.
Serve the sancocho right away, sprinkling chopped cilantro and white onion.
