Place all the oil in a pan or large pot and heat until it is 160 degrees Celsius or when placing a potato begins to bubble.
Cook the potatoes in the oil until they are soft but not fully cooked, about 4 minutes. Remove from the oil and dry with blotting paper towels.
Mix the flour and beer in a deep bowl. Add the egg whites to the bowl and whisk with a balloon whisk.
Pass the fish strips and potatoes through the flour mixture and fry in the hot oil until golden brown.
Remove from the oil and dry with paper towels.
