Ingredients

4 portions
  • 1 guajillo chili
  • 1 Chile de árbol pepper
  • 2 oranges
  • 1 tablespoon apple vinegar
  • 1/2 onions
  • 2 cloves garlic
  • 2 tablespoons achiote
  • 4 Fish fillets, loin of choice sole
  • 2 slices pineapple, freckles
  • 1/2 bunches fresh coriander, chopped
  • 1/2 Romaine lettuce

Preparation

Boil water in a pot.
Soak all the peppers for 10 minutes and then remove the seeds and veins.
Blend the chiles with the vinegar, orange juice, garlic, achiote and onion.
Marinate the fillets in the prepared sauce for two hours.
Cook the fillets on a grill or griddle covered with olive oil and turn once to brown on both sides.
Cut the fillets into strips and mount them on the previously peeled lettuce leaves.
Add the fresh pineapple in cubes and cilantro.
