4 portions
  • 1 jar sweet and sour mango sauce Cocina Mestiza®
  • 5 red snapper, (cut into posts)
  • 1 package cherry tomato
  • 15 grams arugula
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/4 cups olive oil
  • 4 potatoes
  • 2 cups vegetable oil

Sprinkle the fish and reserve in the refrigerator until you cook them.
Pour the sweet and sour mango sauce in a pan and heat at low temperature for 5 minutes.
Place the fish in the pan where you had heating the sauce, cook for 5 minutes on each side.
Heat the olive oil in a pan, place the slices (remove them from the pan with the mango sauce) and seal them to caramelize the fish.
Add the cherry tomatoes to the pan with the sauce, cook for 5 more minutes, taking care not to burn the sauce.
Rectify the seasoning.
Peel and cut the potatoes (in straw form) fry in plenty of oil, taking care not to burn. Remove the oil from the potatoes, drain excess oil and season.
Pour some of the sauce and the cherry tomatoes on a plate. Place the fish and potatoes on top.

Adorna with some arugula leaves.

Use the white fish that you like the most.
