Ingredients

6 portions
  • 1 1/2 kilos red snapper
  • salt, and pepper to taste
  • 100 grams butter
  • 2 tablespoons corn oil
  • 4 cups orange juice
  • 2 1/2 cups pineapple, fresh cut into pieces
  • 4 serrano peppers

Preparation

Wash the fish thoroughly and dry, season and sauté in butter and oil for a few minutes. Remove from heat, add remaining ingredients and bake in preheated oven at 175ºC for 20 minutes or until well cooked.

PRESENTATION

Serve on a platter dipped in its sauce and accompany with white rice.
