Tacos from Huachinango al Pastor

If you love tacos al pastor, try this version based on red snapper, which makes them irresistible since they are prepared with the classic marinade and served with grilled pineapple, cilantro and onions. Accompany them with a green sauce with avocado and enjoy this healthier option.

Ingredients

  • 3 pieces of guajillo chile deveined and soaked
  • 1/4 of piece of onion
  • 1/2 Cup of Orange juice
  • 25 grams of achiote
  • 1 tooth of Garlic
  • 1 teaspoonful of cumin
  • 1 teaspoonful of oregano
  • 1/2 teaspoonful of Salt
  • 4 pieces of red snapper filet cut into strips
  • 2 spoonfuls of Carbonell® olive oil touch
  • to taste of salt and pepper
  • 1 tablespoon of Carbonell® olive oil touch
  • 4 slices of pineapple
  • 8 pieces of Corn tortillas
  • 4 spoonfuls of onion finely chopped, to accompany
  • 4 spoonfuls of coriander finely chopped, to accompany
  • to taste of green sauce with avocado, to accompany

    Preparation

    For the marinade, liquefy the guajillo chile with the onion, the orange juice, the annatto, the garlic, the cumin, the oregano and the salt.
    In a bowl, mix the red snapper in strips with the previous mixture and marina 20 minutes in refrigeration.
    In a frying pan over medium heat, heat the Carbonell® olive oil and cook the fish until it is cooked and golden brown. Season with salt and pepper. Reservation.
    Heat a grill pan with the Carbonell® olive oil olive oil over medium heat and grill the pineapple until it marks on both sides. Cut into cubes.
    Heat corn tortillas in a comal and serve a few strips of fish, add the pineapple, onion, cilantro and serve with sauce.

    PRESENTATION

    Serve your tacos with onion, pineapple and onion. Accompany with salsa and fresh water.
