  • 2 tablespoons olive oil
  • 1/2 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 4 red tomatoes, in cubes
  • 1 leave bay (laurel)
  • 1/2 tablespoons thyme
  • 2 jalapeno Peppers
  • 1/3 cups green olive, sliced
  • 3 tablespoons capers
  • 1/4 cups white wine
  • 2 tilapia fillets
  • enough salt
  • enough black pepper
  • enough chinese parsley


Heat the olive oil in a skillet over medium heat and cook the onion and for a couple of minutes, add the tomato, bay leaf, thyme and oregano. Cover and cook until the tomato releases its juices.
Add the jalapeño pepper, the olives, the capers, and the white wine, cook for 5 minutes, and reduce the sauce a little. Add the tilapia, salt, pepper, cover a little of the sauce and cover until the fish is cooked.
Decorate with Chinese parsley. Accompany with a rice and enjoy.


Garnish with parsley. You can accompany with cauliflower rice to make it even healthier.


If the tomatoes do not release enough juice (it will depend on their ripening), add a bit of tomato puree to the preparation.
