  • 4 beefsteak tomatoes for the shaking
  • 2 guajillo chili peppers hydrated, for shaking
  • 2 chile de árbol peppers hydrated, for shaking
  • 1 stick of unsalted butter for the shaking
  • 2 spoonfuls of soy sauce
  • 2 spoonfuls of English sauce
  • 1 teaspoonful of Maggi juice
  • 4 cloves of garlic

    Preparation

    Prepare your Weber® grill for direct high heat (450 ° - 550 ° F or 232 ° - 287 ° C).
    To prepare the shaking, melt the butter in a pan and sauté the tomato, chilies and garlic. Once fried, blend by adding the soy, the English sauce and the Maggi juice, until you have a homogeneous sauce and reserve.
    Cut the fish into "butterfly", make some small inscriptions in the meat and marina in the shaking for 25 minutes in the refrigerator.
    Place the fish in the Weber Original Fish Basket and transfer to the grill over high heat for 5 to 7 minutes per side; turn it only once.
    Once the fish has an internal temperature of 115 ° F to 125 ° F, remove from the grill and serve hot, accompanied by tortillas and salsa to taste.
