Ingredients

4 portions
  • 4 red snapper fillets, 280 g each
  • to taste garlic powder
  • to taste salt
  • to taste black pepper
  • 2 bell pepper, cut into strips
  • 2 jalapeño peppers, finely chopped
  • enough epazote, in sheets
  • enough banana leaf, roast
  • 2 pieces avocado, for the guacamole
  • 3 tablespoons lemon juice, for the guacamole
  • 1/4 cups onion, finely chopped, for the guacamole
  • 2 tablespoons coriander, finely chopped, for the guacamole
  • 2 teaspoons oil

Preparation

Season the red snapper fillets with the garlic powder, salt and pepper.
Place the red snapper fillets on the banana leaves, add the pepper, the cuaresmeño pepper and the epazote leaves.
Cover the fish with the banana leaves and wrap as if it were a tamale, place in a steamer and cook for 15 minutes over low heat.
For the guacamole, in a bowl with the help of a fork, mash the avocado until obtaining a puree, add the lemon juice, the onion, season with salt, pepper, add the coriander and mix.
Serve on a plate, accompanied by guacamole. Enjoy.

TIPS

You can substitute the red snapper for fillet or mojarra fillet if you are looking for a cheaper option.
