Regional recipe of the Yucatan state, delicious fish macum.

Ingredients

8 servings
  • 2 kilos of fish (mere) on posts
  • 4 pieces of tomato sliced
  • 1 piece of onion slice in hoops
  • 1/2 stick of annatto paste
  • 4 pieces of orange take out the juice
  • 2 cloves of garlic chopped
  • 1/2 teaspoonful of oregano ground
  • 1/2 tablespoon of ground pepper
  • 3 pieces of güero pepper or ixcatic
  • 2 pieces of habanero pepper
  • olive oils
  • 2 cups of Water
  • Salt to taste

    Preparation

    Dissolve achiote with orange juice, salt, pepper, oregano and garlic.
    With the previous mixture, marinate the fish for half an hour.
    In a saucepan, the fish dishes are placed and the whole mixture is mixed with the sea salt. On top, the slices of tomato, onion and chilies are covered and cooked over a low heat for 15 to 25 minutes.

    PRESENTATION

    A post is served decorated with slices of tomato, onion and pieces of chili.

    TIPS

    Chilies, if preferred, can be roasted on a griddle.
