Preparation
Dissolve achiote with orange juice, salt, pepper, oregano and garlic.
With the previous mixture, marinate the fish for half an hour.
In a saucepan, the fish dishes are placed and the whole mixture is mixed with the sea salt. On top, the slices of tomato, onion and chilies are covered and cooked over a low heat for 15 to 25 minutes.
