Ingredients

4 portions
  • 2 kilos clam, white and small
  • 1 onion, small chopped
  • 2 tomatoes, big
  • 2 tablespoons parsley
  • 3 serrano peppers
  • 1 tablespoon fresh coriander, chopped
  • 4 tablespoons olive oil
  • to taste black pepper

Preparation

Chop the onion, tomato and chilli finely.
Wash the clams and their shell very well; arrange them in a deep saucepan.
Pour two cups of cold water, add the chopped onion, tomato and chili.
Add the cilantro, the parsley, the olive oil season with salt and pepper to taste.
Place the pan on the fire; Cover and let boil with soft fire, until everything is smooth and the sauce has been consumed. Serve them hot and ready.

PRESENTATION

You can sprinkle some chopped cilantro at the time of serving.
