In addition, this easy recipe can be accompanied with an exquisite guacamole and fresh lettuce. Ingredients

4 servings
  • 1 tablespoon of olive oil
  • 1 tablespoon of garlic finely chopped
  • 500 grams of Salmon without skin
  • enough of Salt
  • enough of black pepper
  • 1 Cup of tomato finely chopped
  • 1/4 of Cup of onion finely chopped
  • 1/2 Cup of fresh coriander finely chopped
  • 1 piece of egg
  • 1/4 of Cup of ground bread
  • 1 tablespoon of yellow lemon zest
  • 2 pieces of avocado for avocado sauce
  • 1/2 Cup of yellow lemon juice
  • 2 pieces of pickled serrano pepper
  • 3 spoonfuls of avocado oil
  • 1/4 of Cup of coriander
  • enough of Salt
  • enough of black pepper
  • enough of french lettuce at your service
  • enough of radish in thin slices, to decorate
  • enough of fresh thyme To decorate

    Preparation

    Heat a pan over medium heat with the olive oil, cook the garlic until light brown, add the salmon, season with salt and pepper, cook until well cooked. Remove, cool and crumble.
    In the bowl mix the shredded salmon with the tomato, onion, cilantro, egg, breadcrumbs and lemon zest. Season to your liking and shape the pancakes with the help of your hands.
    Heat a pan over medium heat, sprinkle with a little spray, cook the pancakes until golden brown and remove.
    Blend the avocado with the lemon juice, the chile de árbol, the avocado oil, the cilantro, the salt and the pepper until you get a very smooth sauce.
    Serve the pancakes on lettuce leaves, garnish with the guacamole, radish and fresh thyme.

    PRESENTATION

    Serve on lettuce leaves and serve with mashed avocado, radish and thyme.

    TIPS

    Avocado oil helps guacamole not rust. Another option to cook the pancakes is to bake them.
