Heat the oil in a large saucepan, add the onion, garlic and fry for 2 minutes, or until they are clear. Add the tomatoes and continue to simmer for 5 minutes, continuing to move. Add pepper, bay leaf, thyme, salt and liquid from güero peppers. Cover, and continue to simmer for 5 more minutes.
At the time of serving, melt the butter in a pan and lightly sauté the shrimp. Pass them to the pan with the hot sauce and leave them on low heat for 3 to 4 minutes, or until they are cooked. Serve them sprinkled with chopped parsley. Garnish each dish with a güero chile.
