When a dish is Mexican it takes: onion, tomato and chilies. In this shrimp recipe, they are prepared with tomatoes, onions and güeros chiles.

Ingredients

6 portions
  • 2 tablespoons oil
  • 3/4 cups onion, finely chopped
  • garlic
  • tomatoes, ripe, peeled and chopped
  • black pepper, freshly ground
  • 2 leaves bay (laurel)
  • 1 1/2 tablespoons dry thyme
  • 1 tablespoon salt
  • 1 tablespoon liquid from a can of güero chiles in vinegar -, liquid
  • 2 tablespoons butter
  • 1 kilo shrimp, peeled and deveined
  • 3 tablespoons parsley
  • 6 güero peppers in vinegar, or pickled chilli peppers

Preparation

Heat the oil in a large saucepan, add the onion, garlic and fry for 2 minutes, or until they are clear. Add the tomatoes and continue to simmer for 5 minutes, continuing to move. Add pepper, bay leaf, thyme, salt and liquid from güero peppers. Cover, and continue to simmer for 5 more minutes.
At the time of serving, melt the butter in a pan and lightly sauté the shrimp. Pass them to the pan with the hot sauce and leave them on low heat for 3 to 4 minutes, or until they are cooked. Serve them sprinkled with chopped parsley. Garnish each dish with a güero chile.
