Preparation
In a hot frying pan, pour the olive oil and fry the onion with the garlic until they are bright; then add the tomato and the serrano pepper, cook for 3 minutes over medium low heat, stirring constantly. Add the Herdez® Tuna in Water Flakes, the coriander, salt and pepper; cook for 6 more minutes over low heat. Remove from heat and cool slightly.
Place a slightly hot tortilla on a flat surface, add a little of the previous mixture and close in the shape of a quesadilla, use a wooden toothpick to ensure that the filling does not come out. Repeat until finished with the tortillas.
Heat enough vegetable oil in a pan, place the tuna quesadillas and fry both sides for 5 minutes at medium heat. Drain on absorbent paper.
Serve immediately, decorate with coriander leaves, accompany with lemon to taste and guacamole.
