These mussels with saffron sauce can be ready in just 15 minutes. It is a delicious recipe for any day of the week. Serve with a good bread to soak in the caldito.

Ingredients

4 portions
  • 4 shallots, finely chopped
  • 1/4 teaspoons saffron
  • 1 cup dry white wine
  • 1 cup whipping cream
  • 2 kilos mussel, well rinsed and clean
  • parsley, chopped, to serve
  • 3/4 teaspoons salt
  • 1 clove garlic, chopped

Preparation

In a large pot, put the echallots together with the chopped garlic with a little olive oil. Cook until the echallots are transparent and add the saffron.
Add the wine and let it boil. Add the cream, a little pepper, 3/4 teaspoon of salt and the mussels.
Cover the pot and let it cook for 6 minutes. At this time check if all the mussels are already open. If not, cover and cook a couple of minutes more. Discard the mussels that do not open.
Serve the mussels with their hot caldito and sprinkle with chopped parsley on top.

PRESENTATION

Serve with freshly baked garlic bread.
