Ingredients

4 portions
  • 2 guajillo chilies, without veins or seeds, hydrated in hot water; for the marinade
  • 1/4 onions, roasted on the griddle, for the marinade
  • 1 clove garlic, roasted on the griddle, for the marinade
  • 1/4 cups achiote, stick, 40 g, for marinade
  • 1 teaspoon cumin, whole, for marinade
  • 1 teaspoon white vinegar, for the marinade
  • 1/2 cups orange juice, for the marinade
  • to taste salt, for the marinade
  • to taste black pepper, for the marinade
  • 2 cups White fish, cut into thick strips
  • 2 cups wheat flour, for the batter
  • 1 teaspoon garlic powder, for the batter
  • 1/2 teaspoons salt, for the batter
  • 1 tablespoon Rexal® Baking Powder, 15 g
  • 3/4 cups Orange soda, 190 ml, for battering
  • enough wheat flour, to flour
  • enough vegetal oil, to fry
  • 10 flour tortillas, at your service
  • 1/2 cups onion, finely chopped, to accompany
  • 1/2 cups coriander, finely chopped, to accompany
  • enough pineapple, in cubes, to accompany
  • enough lemon, in thirds, to accompany
  • to taste sauce, To accompany

Preparation

For the marinade, blend the guajillo chile along with the onion, garlic, annatto, cumin, vinegar, orange juice, salt and pepper.
Place the fish strips in a large container, pour the annatto marinade until the strips are completely covered, cover with sticky plastic and leave to marinate in the refrigerator for 30 minutes. This step will help the fish to flavor and soften to facilitate cooking.
For the batter, place the flour in a bowl and mix with the garlic powder, salt and Rexal® baking powder with a balloon whisk. Gradually pour in the orange soda while stirring and until a thick dough forms. Reservation.
After time, remove the fish from the refrigerator. Take a strip of fish, try not to have excess marinade sauce, place on the flour and cover on all sides. Dip the floured strip into the batter mix.
Fry in hot vegetable oil over low heat, stir to cook all sides of the fish. Drain on absorbent paper and repeat this step until you finish with the strips.
Build your fish tacos. On a tortilla piece of hot flour, place some strips of battered fish, add onion and coriander, serve with pineapple, lemon and sauce to taste.

PRESENTATION

Serve the fish tacos with onion and coriander, serve with pineapple and lemon to taste. If you want, add sauce.

TIPS

Remember that when frying the fish strips, the oil must be hot and kept on low heat, because if you do not, you run the risk that the batter will only burn or the fish will be raw.
