Preparation
We clean the squid and reserve them. In a pan prepare the pochas, baby squid, chopped onion, tomato peeled and cut into small pieces, laurel, garlic, parsley, paprika and raw oil and covered with cold water. When the boil breaks, lower the heat, and let cook slowly, making sure that the pochas are always covered with water so that they do not release the skin.
Once tender, in about 45 minutes we add salt, add the prawns and mussel meat, cooking very slowly for 2 minutes.
The cooked pochas are removed from the heat and let stand, covered about 5 minutes before serving.
