Preparation
For the filling, in a bowl mix the cheeses with garlic and cilantro, season.
Fill the shrimp with the cheese mixture and wrap each one with the bacon.
Heat a pan over high heat, cook the shrimp until the bacon is crispy, drain on absorbent paper.
For the sauce, heat a saucepan over medium heat and melt the butter, cook the garlic with the onion, add the tamarind concentrate, the mayonnaise, the chipotle pepper and the lime juice, season with salt and pepper. Slightly reduce, cool and serve with the shrimp.
