Los Chiles Paraíso is the dish you will want to cook during the Lenten season. They are rich chiles stuffed with shrimp and gratin with mature eden cheese, it is an exquisite dish.

Ingredients

4 portions
  • 6 poblano peppers
  • 500 grams cheap shrimp
  • 2 1/2 cups cheese, ripe grated eden
  • butter, necessary amount
  • salt, to taste
  • black pepper, to taste
  • 1/2 cups fresh scallion
  • 1 red pepper, finely chopped
  • 2 cloves garlic

Preparation

They roast, devein and peel poblano peppers.
The chives are washed and finely chopped. They wash the red pepper and cut it into small squares.
In a pan put quarter of butter stick over low heat and add the chives and red pepper.
When the butter is melted and I take all the flavor of the scallion and the red pepper, the shrimp are added.
Moments before serving, sauté the chiles with butter and salpinate and sweat, since they are soft and filled with the mixture of shrimp, chives and red pepper.
The peppers are fried in the pan with the ripened eden cheese for 5 minutes.

PRESENTATION

They are accompanied with steamed white rice and salad.

TIPS

Rectify the seasoning at all times and leave the peppers al dente, neither too soft nor too hard. The garlic are whole, they do not sting.
