Ingredients

6 portions
  • 1/2 cups grated coconut
  • 3/4 cups ground bread
  • 2 teaspoons lemon zest
  • 1 tablespoon salt
  • 1/4 tablespoons black pepper
  • 2 eggs
  • 18 big shrimp, peeled, deveined and clean
  • Great Value® Vegetable Oil
  • waxed papers
  • tamarind dressing

Preparation

Prepare a baking sheet with waxed paper.
Mix the crushed bread, grated coconut, lemon zest, salt and pepper in a deep bowl.
In another bowl beat the eggs with a fork.
Pass each shrimp first through the eggs and then through the breaded mixture and place on the baking sheet. This step can be done a couple of hours before, cover the shrimp and refrigerate until frying.
Heat the oil to fry in a large deep frying pan and fry the shrimp until lightly browned and crispy (about 4 minutes). Remove from oil and place on a plate with absorbent paper towels.
Place the shrimp in a platter to serve and accompany the tamarind dressing.
