Ingredients

  • 2 tablespoons of butter
  • 1/2 cup of onion finely chopped
  • 2 tablespoons of garlic finely chopped
  • 1/2 cup of green bell pepper cut into cubes
  • 1/2 cup of red pepper cut into cubes
  • 1/4 of cup of whole corn kernels
  • 2 habanero peppers finely chopped
  • 2 cups of cheap shrimp
  • 1 package of cream cheese
  • 2 tablespoons of fresh coriander
  • enough of salt
  • enough of black pepper
  • enough of flour to extend
  • 500 grams of puff pastry
  • enough of egg to glaze
  • enough of parmesan cheese
  • enough of fresh coriander to decorate

Preparation

Preheat the oven to 200 °C (400 °F)
Heat the butter in a pan over medium heat and cook the onion with the garlic. Add peppers, corn kernels, habanero pepper, shrimp, cream cheese and cilantro. Cook 5 minutes or until the cheese is completely melted and seasoned to your liking. Chill.
On a floured surface spread the puff pastry to 3 mm (0.18 inch) thick and cut long triangles.
Place the triangles on a baking tray, previously greased and floured, forming a circle. Add the filling and wrap with the tips of the triangles forming a thread.
Glaze with egg, sprinkle with Parmesan cheese and cilantro.
Bake for 30 minutes or until the roll is golden brown.
Serve with a salad and a refreshing drink.
