If you like sopes and want to add them to your Lenten menu, prepare these delicious creamy shrimp soups with a hint of Hunts® BBQ Chipotle Sauce. You have never thought about using bbq sauce in this way. They will fascinate you!

Ingredients

4 portions
  • 1/4 tablespoons vegetal oil, for shrimp, beans and sopes
  • 2 tablespoons pitted olive, finely chopped
  • 1/4 cups onion, finely chopped
  • 1/2 kilos shrimp, cleansed
  • 1/4 cups Chipotle Hunt´S ® BBQ Sauce
  • 1/2 cups sour cream
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 cup refried bean
  • 8 sope shell
  • 1 cup lettuce, chopped
  • to taste red onion, cut into thin strips
  • to taste fresh cheese
  • to taste fresh epazote, to decorate
  • to taste radish, cut into slices to decorate

Preparation

In a skillet over medium heat, cook onion and garlic with a tablespoon of oil. Add the shrimp and cook 5 minutes, add the Hunts® BBQ Chipotle Sauce and cream. Cook 5 more minutes and season with salt and pepper. Remove from the fire.
Heat a tablespoon of oil in a pan over medium heat and refry the beans, season with salt and pepper. Reservation.
In a pan over medium heat, heat the rest of the oil over medium heat and fry the sopes for 1 minute, turning halfway through cooking. Remove and drain on absorbent paper.
For the assembly, spread some beans on each sope, add lettuce, shrimp and serve with purple onion, fresh cheese, a sprig of epazote and radish.
Serve and enjoy.

PRESENTATION

Serve your sopes with onion, fresh lettuce, fresh cheese, epazote and radish.

TIPS

You can marinate your shrimp with a little lemon to give them a more acid touch.
