Enjoy these delicious Swiss enchiladas with a twist of the traditional, made with shrimp. They are the traditional Swiss enchiladas but with shrimp.

Ingredients

6 portions
  • 300 grams green tomato
  • 100 grams white onion
  • 50 grams garlic
  • 100 grams jalapeño, green
  • fresh coriander
  • 200 grams light cream cheese
  • 4 corn tortillas
  • 200 grams manchego cheese, grated
  • 150 grams shrimp, matches in 3
  • 1/2 onions, for shrimp
  • 1 clove garlic, for shrimp
  • 2 small boxes tomtato, in cubes, for shrimp
  • salt, to taste
  • black pepper, to taste

Preparation

Boil the tomato, garlic, onion and jalapeños. Once cooked liquefy them with cilantro and cream cheese.
Put a pan with a little oil and put the onion, garlic, tomato, salt and pepper.
Fry the tortillas for two minutes, when fried, fill them with shrimp and roll them up.
Place the tacos in a mold and pour the sauce, place the grated Manchego cheese on top and bake the dish until it is au gratin.
