Fried shrimp with chipotle dipping sauce

Prepare this incredible snack of crunchy breaded shrimp accompanied by a spicy and rich chipotle flavor dressing. You won’t believe the irresistible breaded they have, amazing!

Ingredients

5 servings
  • 1 Cup of Mayonnaise
  • 2 teaspoons of lemon juice
  • 2 teaspoons of chipotle peppers in adobo sauce
  • 4 teaspoons of onion stem chambray finely chopped
  • 1 tablespoon of coriander finely chopped
  • 20 pieces of shrimp clean, without shell but with tail
  • 1 Cup of flour
  • 2 pieces of egg
  • 1 Cup of Chef Merito® Fish fry
  • 1 1/2 cups of oil for frying

    Preparation

    In a food processor or a blender, add the mayonnaise, lime juice and chipotle chilies; process until smooth
    Add the onion and cilantro, continue to process for 10 seconds. Transfer sauce to a food storage container. Cover and refrigerate for at least 2 hours before using.
    Remove the shrimp from refrigeration and peel off the shell, leaving the tail on.
    In three separate pans, place the flour, eggs and Chef Merito® Fish Fry. Dredge the shrimp on both sides in the flour and shake off the excess. Next, dredge the shrimp in the pan of eggs. Then coat both sides of the shrimp in the pan of Chef Merito® Fish Fry.
    Place shrimp one at a time into the oil. Do not crowd the pan. Fry for 2 minutes or until golden brown. Remove from oil with tongs or a slotted spoon and drain on paper towels. Serve fried shrimp with chipotle dipping sauce.

    PRESENTATION

    Serve fried shrimp with chipotle dipping sauce.

    TIPS

    Heat the oil to 350°F befor frying the shrimp, in this way shrimp will not absorb too much fat.
