Pineapple Stuffed with Hawaiian Salad with Shrimp

Prepare this refreshing shrimp salad, with a mixture of very colorful vegetables and a creamy dressing thousand islands. Your lucid presentation will drive your guests crazy at the next party.

Ingredients

4 portions
  • 1 cup mayonnaise, for the dressing
  • 1/4 cups ketchup
  • 4 tablespoons gherkin, finely chopped, for dressing
  • 4 tablespoons red onion, finely chopped, for dressing
  • 1 tablespoon lemon juice, for the dressing
  • 2 tablespoons spicy sauce, for the dressing
  • to taste salt and pepper
  • 1 pineapple
  • 2 1/2 cups cheap shrimp
  • 1/4 cups radish, finely chopped
  • 1/4 cups tomtato, finely chopped
  • 1/4 cups celery, cut in half moons
  • 2 tablespoons onion stem chambray, finely chopped
  • 1 cup pineapple, coratda in cubes
  • 1 avocado, to decorate
  • to taste fresh coriander, to decorate
  • to taste crackers , to serve

Preparation

For the dressing, in a bowl mix the mayonnaise with the ketchup sauce, the pickles, the purple onion, the lemon juice, the spicy sauce and season with salt and pepper. Reserve.
Cut the pineapple in half and with the help of a knife or spoon remove the pulp, cut into small pieces and reserve.
In a bowl, mix the shrimp with the pineapple, the radishes, the tomato, the celery, the onion stems, the pepper, the coriander and the dressing. Season with salt and pepper.
Fill the pineapple with the salad, decorate with a fan of avocado and fresh cilantro. Serve with crackers.

PRESENTATION

TIPS

If you want a more economical option you can substitute the surimi shrimp.
