Pineapple Stuffed with Hawaiian Salad with Shrimp

Prepare this refreshing shrimp salad, with a mixture of very colorful vegetables and a creamy dressing thousand islands. Your lucid presentation will drive your guests crazy at the next party.

Ingredients

4 servings
  • 1 Cup of Mayonnaise for the dressing
  • 1/4 of Cup of ketchup
  • 4 spoonfuls of gherkin finely chopped, for dressing
  • 4 spoonfuls of red onion finely chopped, for dressing
  • 1 tablespoon of lemon juice for the dressing
  • 2 spoonfuls of spicy sauce for the dressing
  • to taste of salt and pepper
  • 1 piece of pineapple
  • 2 1/2 cups of cheap shrimp
  • 1/4 of Cup of radish finely chopped
  • 1/4 of Cup of tomato finely chopped
  • 1/4 of Cup of celery cut in half moons
  • 2 spoonfuls of onion stem chambray finely chopped
  • 1 Cup of pineapple coratda in cubes
  • 1 piece of avocado to decorate
  • to taste of coriander to decorate
  • to taste of crackers to serve

    Preparation

    For the dressing, in a bowl mix the mayonnaise with the ketchup sauce, the pickles, the purple onion, the lemon juice, the spicy sauce and season with salt and pepper. Reserve.
    Cut the pineapple in half and with the help of a knife or spoon remove the pulp, cut into small pieces and reserve.
    In a bowl, mix the shrimp with the pineapple, the radishes, the tomato, the celery, the onion stems, the pepper, the coriander and the dressing. Season with salt and pepper.
    Fill the pineapple with the salad, decorate with a fan of avocado and fresh cilantro. Serve with crackers.

    TIPS

    If you want a more economical option you can substitute the surimi shrimp.
