Potato and Shrimp Pancakes with Nopales

Try these delicious potato and shrimp pancakes with nopalitos in green sauce. They are ideal for Lent because besides being super easy to prepare, they are economical and reliable. Your family will love it.

Ingredients

4 servings
  • 5 pieces of White potato cooked and peeled
  • 1/2 Cup of Dry shrimp ground
  • 1/2 Cup of Cotija cheese grated
  • 2 pieces of egg
  • 4 spoonfuls of ground bread
  • 3 spoonfuls of oil
  • 3 cups of nopal Cooked
  • 5 pieces of green tomato
  • 1/4 of piece of onion
  • 1 piece of jalapeño
  • 1 piece of serrano pepper
  • 1/4 of Cup of coriander
  • to taste of salt and pepper
  • 1 tablespoon of oil

    Preparation

    In a bowl mash the potatoes until you get a puree, add the shrimp powder, the cotija cheese, the egg, the ground bread and season with salt and pepper. With the help of a spoon stir until you integrate all the ingredients.
    Take a little of the preparation with your hands and form the pancakes, cook in a pan with a little oil for a couple of minutes or until golden brown. Drain on absorbent paper and reserve.
    For the green sauce, in a pot with water, boil the tomatoes, onion and chilies for about 10 minutes. Chill slightly and liquefy without liquid until you get a sauce.
    In a saucepan, heat the oil over medium heat and fry the sauce. Once the boil cooks for 10 minutes, add the nopales, season and reserve.
    On a plate, use the green sauce with nopales and place the pancakes on top. Garnish with fresh coriander leaves and enjoy.

    PRESENTATION

    Serve in a circular clay dish and garnish with fresh coriander leaves.

    TIPS

    Cut the potatoes into cubes so they cook faster.
