Ingredients

4 portions
  • 250 grams Dry shrimp
  • 3 eggs, separated (clear on one side, yolk on the other)
  • olive oils
  • salt
  • 1 kilo rosemary
  • 1 clove garlic, chopped
  • 1 cup tomtato, chopped
  • 1 cup leek, chopped
  • 1 cup marinara sauce
  • 1 cup turkey broth
  • 1 teaspoon cinnamon
  • 2 tablespoons pequin pepper
  • 4 tablespoons cocoa powder, sugarfree

Preparation

Wash and cook the romeritos, reserve to add to the mole.
Clean the shrimp by removing the head, legs, carapace and tail.
In a processor it mince the shrimp without spraying too much and reserve.
Beat the egg whites to the nougat point and incorporate the yolks one by one with care.
Sprinkle the shrimp with a spoon, little by little, over the beaten eggs and stir gently.
In a pan heat a little oil.
Pour a spoonful of shrimp into the oil and cook on both sides.
Combine the chicken broth, cocoa, piquine chili, cinnamon and marinara sauce and cook in a pan for 5 minutes. Add the garlic, tomato, leek and chicken broth.
Let everything boil until a thick consistency appears.
Add the romeritos to the mole and cook the whole until it is very hot and ready to serve your guests.
