Shrimp Enchiladas in Chipotle Sauce

Ingredients

4 servings
  • 1 Cup of sour cream for the sauce
  • 5 spoonfuls of chipotle chile pepper for the sauce
  • 95 grams of cream cheese (1/2 package) for the sauce
  • 1 Cup of milk for the sauce
  • 1/4 of piece of onion for the sauce
  • 1 clove of garlic for the sauce
  • to taste of salt and pepper for the sauce
  • 2 spoonfuls of Butter for the filling
  • 1/4 of Cup of onion finely chopped, for filling
  • 1 tablespoon of garlic Finely chopped, for filling
  • 2 cups of shrimp clean, without shell
  • 1 tablespoon of parsley finely chopped
  • 12 pieces of Corn tortillas
  • enough of oil to fry tortillas
  • to taste of avocado in slices, to serve
  • to taste of onion in strips, to serve
  • to taste of fresh cheese crumbled, to decorate
  • to taste of coriander to decorate

    Preparation

    For the sauce: blend the cream with chipotle chili, cream cheese, milk, onion, garlic.
    Heat a pan over medium heat, cook the chipotle chile sauce for about 10 minutes, season with salt and pepper.
    For the filling: Heat the butter over medium heat and cook the onion, garlic, shrimp, cook for 5 min, add the parsley.
    For the enchiladas: In a pan heat the oil, fry the tortillas, place in absorbent paper and reserve.
    On a board, fill the tortillas with the preparation of the shrimp, on a plate place a mirror of sauce and add the enchiladas bathe with more sauce and decorate with fresh cheese, onion, cilantro and avocado.

    PRESENTATION

    Serve the enchiladas with salsa and slices of avocado.

    TIPS

    Pass the tortillas through hot oil for only 30 seconds, otherwise they will become harder because of the frying and you will not be able to bend them.
