Ingredients

4 portions
  • 600 grams medium shrimp, without the shell and cleaned
  • 2 tablespoons olive oil, (divided)
  • to taste salt and pepper
  • 1 teaspoon chili seeds, (crushed pepper)
  • 1 tablespoon garlic, finely chopped
  • 1/4 cups onion, finely chopped
  • 1 Bell pepper, julienne orange
  • 1 red bell pepper, in julienne
  • 2 tomatoes, in cubes
  • 1/4 cups mashed tomatoes
  • 1 branch basil, fresh
  • 1 branch fresh coriander
  • 1 cup Silk® Unsweetened coconut milk
  • 1 teaspoon ginger, ground
  • 1/2 teaspoons paprika
  • 1 serrano pepper, sliced ​​to decorate
  • to taste fresh coriander, to decorate
  • to taste basil leaf, chopped, to decorate

Preparation

In a bowl, marinate the shrimp with a tablespoon of olive oil, salt, pepper, chili seeds and garlic about 15 minutes.
Heat a deep skillet over medium heat with a tablespoon of olive oil and cook the onion until transparent. Add peppers and cook 1 minute, season with salt and pepper. Add the tomato puree, the basil, the parsley and cook for 2 minutes.
Once the vegetables are cooked, add a cup of unsweetened Silk® coconut, ginger and paprika, cook a minute and season to taste. Cool slightly and blend until you get a smooth and homogeneous sauce.
In the same pan, cook the marinated shrimp for about 3 minutes or until they change color, add the sauce and bring to a boil, season to taste and remove from the stove.
Serve the shrimp with the sauce and garnish with sliced ​​chile serrano, coriander leaves and chopped fresh basil.

PRESENTATION

Serve with white or wild rice and a salad.

TIPS

Watch carefully not to overcook the shrimp because they can get tough.
