Shrimp Pancakes with Nopales and Colorado Chili

This recipe is prepared in my city on Easter and Easter, in some states of the Mexican Republic there are variations of this dish. In particular I like to enjoy it on any day of the year.

  • 6 guajillo chilies
  • 2 chipotle chilies
  • 1 tomtato, big
  • 4 tomatillos
  • 3 eggs, separated
  • 1/2 cups shrimp, ground powder
  • 6 nopales, cut into squares and cooked
  • 1 clove garlic
  • 1 piece onion
  • oils, necessary


Chilli, tomatoes, tomatillos, garlic and onion are cooked, on the other hand the nopales are already cooked and we add anything that is copper with this the baba is cut completely we put salt to the cooking water.
While we beat the whites to the point of nougat and add the yolks and beat, add the shrimp powder.
Since the chiles were cooked and the tomatoes are ground, they are strained and fried in a bottom pot, without oil, not seasoning because the shrimp powder is salty, we leave it on low heat, since it is ready we add the nopales already Cooked and drained of water and let it boil for about 15 minutes.
While in a pan put to heat oil or a lot and there with a spoon we make pancakes about 5 centimeters in diameter gilding on both sides and drain them on paper napkins to remove the excess oil.
Since the sauce is, add the pancakes to just a boil of 5 minutes, should be left with some broth we rectify salt, if necessary add a little, serve immediately.


If you do not like ground shrimp you can use chopped shrimp or shredded whole.

Pues no es camarón en polvo, si ,existe pero está hecho a base de la carcasa del camarón , es mejor usar pulpa de camarón , es más cara pero vale la pena
