Preparation
Mix all the ingredients for the sauce: the mayonnaise, the siracha sauce, the sugar, and the rice vinegar.
Mix the egg with the milk in a deep bowl and reserve.
Mix the flour, panko, salt, pepper, garlic powder in another deep bowl and reserve.
Wash, peel and clean the shrimp, making sure to remove the dark intestines.
Beat each shrimp by first passing it through the flour mixture, then the egg and then the flour again. Place in a dish and refrigerate for 20 minutes.
Heat a lot of vegetable oil in a large pan. Once it is hot, fry the shrimp until golden brown (about 3 minutes). Remove from oil and place on paper towels.
Mix the shrimp in the sauce and place on the skewers.
Garnish with chopped chives and serve.
