This recipe for breaded shrimp tacos with mango cockerel spike and chipotle dressing was what your weekend needed.   • 2 serrano peppers, diced, for pico de gallo
  • 1/2 cups mango, diced, for pico de gallo
  • 1/4 cups fresh coriander, finely chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 2 San Juan® Eggs
  • 1 cup beer
  • to taste salt
  • to taste black pepper
  • 500 grams shrimp
  • enough vegetal oil, to fry
  • 500 grams corn dough
  • 1/4 cups beet puree
  • to taste salt

Preparation

For the pico de gallo with mango, mix the tomato, onion, serrano pepper, mango, cilantro, lemon juice, olive oil, salt and pepper. Reservation.
In a bowl, mix the flour with the baking powder, the San Juan® Egg, beer, salt and pepper.
Dip the shrimp in the previous mixture and fry in hot oil until golden brown. Drain on absorbent paper to remove excess grease.
Mix the corn dough with the beet puree and salt until you have a homogeneous mixture.
Make balls with your hands and with the help of a press prepare the tortillas; Cook them in a comal.
