This recipe for breaded shrimp tacos with mango cockerel spike and chipotle dressing was what your weekend needed. Ingredients

4 servings

  • 1/4 of Cup of onion diced, for pico de gallo
  • 2 Serrano cpeppers diced, for pico de gallo
  • 1/2 Cup of mango diced, for pico de gallo
  • 1/4 of Cup of coriander finely chopped
  • 1 tablespoon of lemon juice
  • 1 tablespoon of olive oil
  • to taste of Salt
  • to taste of black pepper
  • 1 1/2 cups of flour
  • 1 teaspoonful of baking powder
  • 2 San Juan® egg
  • 1 Cup of beer
  • to taste of Salt
  • to taste of black pepper
  • 500 grams of shrimp
  • enough of vegetable oil to fry
  • 500 grams of corn dough
  • 1/4 of Cup of beet puree
  • to taste of Salt
  • enough of dressing chipotle to accompany
  • green lemons To accompany

Preparation

For the pico de gallo with mango, mix the tomato, onion, serrano pepper, mango, cilantro, lemon juice, olive oil, salt and pepper. Reservation.
In a bowl, mix the flour with the baking powder, the San Juan® Egg, beer, salt and pepper.
Dip the shrimp in the previous mixture and fry in hot oil until golden brown. Drain on absorbent paper to remove excess grease.
Mix the corn dough with the beet puree and salt until you have a homogeneous mixture.
Make balls with your hands and with the help of a press prepare the tortillas; Cook them in a comal.
Serve the tacos with the mango rooster's beak. Accompany with a chipotle dressing, lemons and enjoy.
