Ingredients

4 portions
  • 130 grams cheap shrimp, precooked
  • 1 package fried or toasted corn tortilla, mini
  • 50 grams ground bread
  • 2 eggs
  • 50 grams White flour
  • salt, and pepper
  • 2 tablespoons mayonnaise
  • 5 tablespoons sour cream
  • 2 chipotle chilies, with marinade
  • 1 green lettuce
  • tomato sauces, or ketup (optional)

Preparation

Sprinkle salt and pepper on the plate with flour.
Beat the two eggs in a deep bowl, salt as well.
Remove the black part of each shrimp, rinse and dry them well with a cloth or paper towel.
Pass all the shrimp for flour. This will help to make them better and more compact.
Now pass them by egg, make sure they are well covered.
Immediately wrap them on both sides.
Add enough oil to a pan, wait until it is hot. To prove this, I suggest you place some bread crumbs in it, when it begins to bubble, the oil will be ready to fry.
Place the shrimp little by little, when they look golden, remove them from the fire. Put absorbent paper in an extended dish to remove excess grease. Care at all times not to burn, because if you leave them a few extra minutes in the pan can turn black.
On the other hand, place in the glass of the blender: cream, mayonnaise and chipotle with everything and marinade. Blend until a homogeneous mixture is obtained. Try and if you like you can add more than one ingredient, and pepper.
Spread each toast with a little of the mixture. Place a leaf of lettuce previously disinfected and on top 3 or 4 breaded shrimps.
Top the toast with a little more cream with chipotle. Accompany with lemon and tomato sauce or ketchup to taste.

PRESENTATION

Assemble the toast in a large extended dish so that everyone can take the ones they want.

TIPS

Accompany with lemon, purple onion, cilantro and more chipotle.
