The mixture of seafood with vegetables is always a great option, here is this recipe of Stuffed Tomatoes with Shrimp Aguachile, which will undoubtedly be a fresh dish, healthy and with a spicy touch. This recipe for aguachile with mango will highlight more the flavors of this dish, which is ideal for the Lenten season or if you are on a diet. It is important that you let the shrimp marinate enough to be denatured by the lemon acid.

Ingredients

4 servings
  • 2 pieces of green tomato
  • 1 Cup of lemon juice
  • 1 piece of habanero pepper Roast
  • 2 spoonfuls of coriander
  • enough of Salt
  • enough of black pepper
  • 500 grams of shrimp clean and without peel
  • 1 Cup of cucumber cut into cubes
  • 1/2 Cup of mango cut into cubes
  • 1/4 of piece of red onion filleted
  • 4 pieces of beefsteak tomato
  • 4 leaves of parsley
  • enough of extra virgin olive oil to serve

    Preparation

    Blend the tomato with lemon juice, habanero pepper, cilantro, salt and pepper.
    In a bowl, mix the shrimp with the previous mixture and marinate at least 30 minutes in refrigeration or until they change color.
    Once the shrimp have changed color, mix with the cucumber, mango and purple onion. Season to taste and set aside.
    On a board, cut one end of the tomatoes and remove the pulp, taking care not to break them, to hollow them out. Fill with shrimp aguachile and garnish with fresh parsley.
    Serve with a little olive oil.

    PRESENTATION

    Serve the tomato decorated with parsley and a few drops of olive oil.

    TIPS
