Preparation
Blend the tomato with lemon juice, habanero pepper, cilantro, salt and pepper.
In a bowl, mix the shrimp with the previous mixture and marina at least 30 minutes in refrigeration or until they change color.
Once the shrimp have changed color, mix with the cucumber, mango and purple onion. Rectify seasoning and reserve.
On a board, cut one end of the tomatoes and remove the pulp, taking care not to break them, to hollow them out. Fill with shrimp aguachile and garnish with fresh parsley.
Serve with a little olive oil.
