Rice with shrimp is an ideal main dish for a light lunch, as it does not have many calories but high quality proteins and fats.

Ingredients

2 portions
  • 1/2 cups whole-grain rice
  • 1/2 green bell peppers
  • 1/2 red peppers
  • 1 onion, median
  • 1 cup Vegetables soup, or chicken or water background
  • 200 grams shrimp
  • 1 tablespoon olive oil

Preparation

Clean the vegetables and chop. In a pan sauté with the olive oil the peppers and the chopped onion. When they are tender add the rice and mix. Immediately add the broth and let cook.
In a separate skillet sauté previously cleaned shrimp. Once cooked add them to the rice, mix and let cook for 2 more minutes. We retire and ready to consume.

TIPS

We must add vegetable broth as the preparation calls for it and until the rice is tender, but has absorbed all the liquid.
