This salmon recipe is delicious and lucidora for a dinner with friends. I prepare it with homemade pesto but you can also use pesto bought.

Ingredients

6 portions
  • 6 salmon fillets
  • 6 tablespoons almond
  • puff pastry, bought enough
  • 2 tomatoes, sliced
  • 2 cups basil leaf
  • 1/4 cups walnut, or pine nuts
  • 2/3 cups olive oil
  • 1/2 cups parmesan cheese, finely grated
  • drops lemon juice

Preparation

Prepare the pesto: in a food processor mix the basil leaves, walnuts, olive oil, Parmesan cheese and a few drops of lemon juice.
Preheat the oven to 180 degrees.
Knead the puff pastry until thin and cut into 6 rectangles the size of each salmon fillet. Place on a greased baking sheet (or with baking paper) and place in the oven for 15 minutes until it inflates and browns a little.
Put the salmon fillets in a refractory with a little olive oil. Sprinkle with salt and pepper.
Put 1 tablespoon of sliced ​​almonds on top of each salmon and put in the oven for 10 minutes or until the salmon is opaque.
To serve: put on each plate the puff pastry, then a tablespoon of pesto on top covering all the puff pastry, then a few slices of tomato, and on top of the salmon.
Serve with cous cous or rice.

PRESENTATION

It is advisable to prepare the salmon turnovers until just before serving as the puff pastry can be watered.

TIPS

The pesto is sold in the sauces section for pasta in supermarkets. Accompany this dish with a Chardonnay wine.
