  • 2 mangos
  • 1 grapefruit, (grapefruit)
  • 1 orange
  • 1 tangerine
  • 1 lemon
  • 1 corsage lettuce
  • 1/2 red onions
  • 1/2 liters natural yogurt, skimmed
  • 1/2 cups walnut, toast and chopped
  • 1/4 cups white wine, or red vinegar
  • 1/4 cups olive oil
  • 1 teaspoon dry rosemary
  • 1 teaspoon dry tarragon
  • 400 grams salmon, with skin


Salmon: Cut 4 squares of 30 x 30 aprox. Aluminum foil for cooking. Place a piece of salmon in the center of the paper Season the salmon with salt, pepper, herbs and a few drops of olive oil. Place a slice of lemon. Fold the ends of the paper until the salmon is completely wrapped. Place the fish already wrapped in an oven tray and bake for 10 to 15 minutes. at 120 ° C.
Salad: Disinfect the lettuces and cut them into large pieces. Place in a bowl. Chop the purple onion in rings. Remove the segments of citrus fruits (grapefruit / grapefruit, orange and tangerine). Take care to remove all the internal white skin. Stir the ingredients together with the nut.
Dressing: Blend the pulp of two mangoes with white wine or white wine vinegar, olive oil and natural yogurt. Season with pepper to taste.


Unwrap the salmon after cooking and place aside the salad bathed in the mango dressing.


If you do not want to cook the salmon in the oven put it already wrapped in aluminum foil in a steamer over low heat taking care that it does not pass and remains fresh. You can add some fresh mint leaves to the mango garnish.
