A rich baked salmon made with a crust of bread, parsley and olive oil.

Ingredients

4 portions
  • 4 salmon fillets, fresh (200 grams each)
  • 3 slices slice of white bread
  • 1 cup parsley, cool
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 3 tablespoons lemon juice
  • 200 grams spinach, cool
  • 1/2 red onions, cut in julienne

Preparation

Pre-heat the oven to 200 degrees Celsius.
Prepare a baking sheet with aluminum foil.
In a food processor, process the bread, the parsley, 1 tablespoon of olive oil and season with salt and pepper to taste.
Place the salmon fillets on the baking sheet and season with salt and pepper. With a spoon place a layer of dijon mustard on each steak and on it the mixture of bread crumbs.
I baked the salmon for 11-13 minutes or 20 minutes if you decided to make a large filet.
Meanwhile in a deep bowl combine lemon juice and olive oil and season with salt and pepper. Add onion and spinach and mix.

PRESENTATION

Serve the salmon with the spinach salad, decorate your saucer with slices of lemon.

TIPS

This recipe can be made with a large filet of salmon (1 kilo) if you prefer. Accompany this dish with a Chardonnay wine.
