Preparation
Pre-heat the oven to 200 degrees Celsius.
Prepare a baking sheet with aluminum foil.
In a food processor, process the bread, the parsley, 1 tablespoon of olive oil and season with salt and pepper to taste.
Place the salmon fillets on the baking sheet and season with salt and pepper. With a spoon place a layer of dijon mustard on each steak and on it the mixture of bread crumbs.
I baked the salmon for 11-13 minutes or 20 minutes if you decided to make a large filet.
Meanwhile in a deep bowl combine lemon juice and olive oil and season with salt and pepper. Add onion and spinach and mix.
