Wallpaper salmon is a delicious preparation, and above all very healthy. It is a dish packed with omega-3s, where the yellow lemon and onion perfume the fish, giving it an unbeatable flavor.

Ingredients

4 portions
  • 60 milliliters Oléico® safflower oil
  • 1 fresh salmon fillet with skin, (approximately 1.5 kg) split into 4
  • 700 grams chinese green bean
  • 4 yellow lemons
  • 1 onion
  • 1 red bell pepper
  • 120 milliliters lime juice
  • 4 tablespoons dill
  • 4 tablespoons capers
  • 1/2 cups olive, slice
  • salt and pepper

Preparation

With the help of a mandolin, thinly slice the yellow lemon. Slice the onion. Cut the bell pepper into strips. Cut the green beans in half.
In a bowl add the lemon, vegetables, capers and olives. Stir well and reserve.
Salt and pepper the fish and add dill.
Marinate the fish in the mixture that you prepared of lemon and vegetables. After 2 hours, remove it from the marinade. Strain the vegetables from the marinade and keep just a little of the juice.
Cut 30 x 30 cm squares. of aluminum foil. In the center of a square of aluminum foil (on the shiny side), pour a tablespoon of oil. Top with the fish. Add some of the vegetables and pour in a couple of tablespoons of the marinade juice.
Close the aluminum foil as tightly as possible. Repeat this step with all the salmon.
Place the foil-wrapped salmon packets in a skillet over medium heat. Cook on each side for about 10 minutes.

PRESENTATION

Accompany with a spinach and tomato salad.

TIPS

Try not to overcook the salmon, it has to be a little raw. So it is necessary to check the cooking before the indicated time.
